Easy Tofu Scramble

Tofu scrambles are a popular and low carb vegan breakfast option especially for beginners. Its incredibly easy, simply drain the tofu then crumble using your hands or a fork before sautéing.

Ingredients

  • 500 g firm tofu drained and crumbled into large pieces
  • 1 tablespoon olive oil
  • ½ white onion diced
  • 1 jalapeno finely diced
  • 1 large roma tomato diced
  • salt and pepper to taste

Instructions

  • Heat the oil in a skillet on medium heat. Sauté the onions for 10 minutes or until softened and starting to brown. Add the jalapeno and tomato then sauté a further 2 minutes.
  • Stir in the tofu and fry for 3 minutes. Season to taste and serve.
