Easy Roast Garlic and Mint Hummus
A quick hummus recipe, the classic flavour is offset with the rich roasted garlic and fresh mint.
- 1 400 g can chickpeas
- a head of garlic
- ¼ cup loosely packed mint leaves
- juice of 1 lemon
- 2 tablespoons tahini
- 2 tablespoons olive oil
- salt to taste
Preheat oven to 210°remove the outer layers of skin from the garlic and place on a lined baking tray, roast for 10-15 minutes or until soft.
Remove the garlic cloves from the head and transfer to a blender or food processor along with remaining ingredients. Blitz to a smooth consistency. Serve topped with additional olive oil and fresh parsley.
