Easy Roast Garlic and Mint Hummus

A quick hummus recipe, the classic flavour is offset with the rich roasted garlic and fresh mint.

  • 1 400 g can chickpeas
  • a head of garlic
  • ┬╝ cup loosely packed mint leaves
  • juice of 1 lemon
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • salt to taste


  • Preheat oven to 210┬░remove the outer layers of skin from the garlic and place on a lined baking tray, roast for 10-15 minutes or until soft.
  • Remove the garlic cloves from the head and transfer to a blender or food processor along with remaining ingredients. Blitz to a smooth consistency. Serve topped with additional olive oil and fresh parsley.
