Cheesy garlic and herb scones
These aren’t your grandmother’s scones, packed with cheddar cheese and garlic, they’re great as a side dish for soups and stews or can be spread with chutney or relish and enjoyed alone.
Servings: 10 scones
- 50 g butter
- 2 cups self-raising flour
- ¾ cup milk plus extra to brush
- 100 g grated cheddar cheese
- 2 teaspoons minced garlic
- 2 teaspoons dried thyme
Preheat oven to 200°C (conventionaor 180°C (fan forced).
In a bowl, use your hands to rub butter into flower until mixture reaches a breadcrumb consistency.
Mix through thyme, garlic and cheese. Create a well in the centre of the mixture and pour in milk. Mix with a spatula until a soft dough begins to form.
Turn onto floured surface and knead gently until the dough becomes smooth (no more than 2 minutes).
Roll out dough to 2cm thick. Cut into 10 even, square pieces. Place on a lined baking tray and brush with milk. Bake for 25 minutes or until golden brown. Serve hot.
