
Tofu scrambles are a popular and low carb vegan breakfast option especially for beginners. Its incredibly easy, simply drain the tofu then crumble using your hands or a fork before sautéing. Its great served over toast or alongside some grilled vegetables. Tofu, unlike eggs, has very little flavour of it own so it takes plenty of seasoning to give the dish flavour.

Ingredients
- 500 g firm tofu drained and crumbled into large pieces
- 1 tablespoon olive oil
- ½ white onion diced
- 1 jalapeno finely diced
- 1 large roma tomato diced
- salt and pepper to taste
Instructions
- Heat the oil in a skillet on medium heat. Sauté the onions for 10 minutes or until softened and starting to brown. Add the jalapeno and tomato then sauté a further 2 minutes.
- Stir in the tofu and fry for 3 minutes. Season to taste and serve.
