A quick and easy hummus recipe that you can whip up as a snack, a dressing or for entertaining. Hummus is something everyone should know how to make, its very versatile and its ripe for experimenting with different flavours that you want to add.
Easy Roast Garlic and Mint Hummus
- 1 400 g can chickpeas
- a head of garlic
- ¼ cup loosely packed mint leaves
- juice of 1 lemon
- 2 tablespoons tahini
- 2 tablespoons olive oil
- salt to taste
- Preheat oven to 210°remove the outer layers of skin from the garlic and place on a lined baking tray, roast for 10-15 minutes or until soft.
- Remove the garlic cloves from the head and transfer to a blender or food processor along with remaining ingredients. Blitz to a smooth consistency. Serve topped with additional olive oil and fresh parsley.
